Perfectly Pinterest! Recipe: Chocolate Pumpkin Cookies

Coming up with your own recipes can be a little daunting. Figuring out what people might like, making sure that it is affordable, taking pretty pictures, as well as making sure that it tastes good takes a lot of time. Although I thoroughly enjoy creating recipes for the blog...sometimes I have a little "recipe block." With that being said, Kiera had the glorious idea of taking a recipe I have tried on Pinterest and sharing it on the blog. I loved this idea! It is so hard to figure out which recipes are duds when you have never made them before. Now I can test them out for you and let you know it is a win, or skip. I can also inform you of any incorrect cook times or measuring.

Since we are embarking on the greatest season of all, I thought my first Perfectly Pinterest recipe should be fall inspired. At first glance, chocolate and pumpkin may seem like an unlikely pair but let me know tell you, it is not. It is a match made in heaven. Starbucks, do I feel a pumpkin mocha coming soon?

Besides the amazing flavor combination, I love that it uses a boxed cake mix. If you are anything like me, you load up on these quick and easy mixes when they are on sale for $1 are the grocery store. The problem is, I am not always making a cake. So they just sit there...and wait...and wait...until a holiday or birthday. This particular recipe uses a chocolate cake mix. Also, if you have not had pumpkin flavored Hershey's Kisses, you are missing out BIG time. I will never forget the first time I had these. My sister was living in Florida and I flew in to celebrate Thanksgiving, or "Sister Day" as we like to call it. She had a bag of them in the fridge and tossed me one. It was the most glorious, rich, melty, tasty bite of pumpkin flavored anything I have ever had in my life. But beware, these tasty treats sell out fast and can be hard to find. If you see a bag grab it! Although you might not be ready for fall just yet, it is good to have in the cupboard for future use.

Chocolate pumpkin kiss cookies

Ingredients:

• 1 box devil's food cake mix (chocolate will work too or your favorite cake mix)

• 1 15 oz can pumpkin (not pie filling)

• 1 bag pumpkin spice Hershey's Kisses

Directions:

1. Pre-heat oven to 350°. 2. In a large bowl combine cake mix and pumpkin. Stir or use a mixer until dough is smooth. 3. Line baking sheet with parchment paper or a baking mat. Scoop cookie dough onto the pan and then bake for 8-10 minutes. 4. Remove pan and allow to cool for one minute on pan. Gently press kisses in the center of the cookies and then place cookies on a cooling rack.
