Santa Fe Chicken Dip
There is nothing I like more than chips and dips. I can stop myself from overeating most things but definitely not chips and a ooey gooey cheesy dip! I have my usual dips I make for football games or holidays but they were getting old and I really wanted to try something new.
At the fancy steakhouse chain, The Keg, they have a pretty good chicken cheese dip that they serve on their cocktail hour menu. I wanted to try and make my very own cheesy chicken dip inspired by their hot and yummy dip.
First you will want to preheat your oven to 375 degrees. While the oven is heating up, you can start getting all of the ingredients for your dip. This recipe calls for a quarter of a cup of cooked diced chicken so you could use some leftover rotisserie or grilled chicken from a prior meal. I always have frozen fajita chicken in my freezer so I opted to use that for this recipe.
Again, this is a recipe that you could adjust to your own liking. I am going to keep it simple but you could always add some corn, cilantro, green chilies, onions, or tomatoes. I would even suggest using mushrooms or a veggie meat (taco crumbles, soy chorizo, faken chicken, etc) if you would like a vegetarian option. I used chicken, black beans, salsa, and, of course, cheese!
Simply mix all of your ingredients together and put into a small casserole dish or oven safe bowl. Now you will just bake for 20-25 minutes or until hot and bubbly. Serve immediately with tortilla chips! Nom nom nom!! Try this easy dip for your next gathering and you and your guests will not be disappointed. Plus, it is step up from the usual chips and salsa or crock pot cheese dip that most people are used to when going to a gathering.
After you have tried all of my warm and gooey dips, you will need to buy a small casserole dish of you own so you can always make them. Your family will start requesting them on a regular basis, I promise!
Santa Fe Chicken Dip
¼ cup Black beans
½ cup Chicken, cooked and diced
¼ cup Taco sauce or salsa
4 oz Cream cheese, softened
½ cup Sour cream
½ cup Cheddar cheese, grated
½ cup Monterey jack cheese, grated
Tortilla chips for dipping
Optional ingredients to add: green chilies, corn, onion, tomato, or cilantro
Preheat oven to 375. Mix all ingredients. Spread mixture into small casserole dish or oven safe bowl. Bake for 20-25 minutes or until hot and bubbly. Serve immediately with tortilla chips.
