Hot Beer Cheese Dip
I love football! Yes, I am a girl who likes watching football and I actually know what is going on. I look forward to fall for the nice weather change but mostly because I know how I will be spending my weekends. Saturdays are all about Michigan (Go Blue!) and Arizona State (Fork ‘em Devils!) and Sundays are all about the Lions and the Cardinals in my household. We like to watch football, eat snacks, and lounge during football season. It is one of my favorite things to do.
So, when the Super Bowl comes around. Although, our teams are never in it, I like to make our snacks even extra special to celebrate the end of the season. I wanted to try something new and I came across a recipe on Pinterest by cookthestory.com . It was for Easy Beer and Cheddar dip. That sounds very fitting for a football snack.
Have you ever been to the local brewery? If so, they tend to have a hot beer cheese dip on the menu. I was really hoping that this dip would remind of these dips and it did not disappoint. I would strongly suggest using an amber or stout for the beer because I think it just makes the dip more tasty but if all you have are the usual light beers, they will work too. We do not drink beer so thankfully; I have some leftover beers in the fridge from when people come over. I used a Newcastle Brown Ale for this and it was amazing! So, if you do not regularly keep beer in the fridge and are going to make this recipe, go to the store where you can buy individual bottles of beer and opt for a nicer quality beer.
I chose to serve this dip with frozen soft pretzels that you can purchase at your local supermarket. This particular box was on sale for $.99 so it made it easy for me to figure out how I was going to serve it. They only took about 4 minutes in the oven too! It was amazing with the pretzels and I really do not know why you would not serve it like this but you could also serve it with some sliced up baguette or chopped veggies. Enjoy!

Hot Beer Cheese Dip
3 cups Sharp Cheddar Cheese, grated
½ cup Beer
¾ cup Milk
2 Tbsp of Butter
3 Tbsp of Flour
1 tsp Mustard, preferably Dijon
½ tsp Garlic, minced
Pinch of salt and cayenne pepper
Soft Pretzels for dipping
In a medium sized saucepan melt butter over medium heat. Whisk in flour. Remove pan from heat and add half of the milk. Mix until smooth. Add other half of milk and mix until smooth. Stir in beer, garlic, and spices. Heat pan on medium heat until it gets thick, about 3-5 minutes. Remove from heat and start adding cheese a handful at a time. Mix and melt each handful before putting in more. Do this until all cheese is melted. Serve with soft pretzels, bread, or veggies.
