Southwest Chicken Caesar Salad


I get addicted to things I eat at restaurants and once I find my favorite at a particular restaurant, I get it every time I go. I am not one of those people who gets something new each time I go. I wind up craving certain meals and go there just to order that specific meal. That is why you will find me at Paradise Bakery from time to time ordering my all time favorite salad. I absolutely love the southwest chicken Caesar salad from there and although it is one of the most annoying places to order food, you will find me there on a regular basis.

Like I mentioned above, it is an annoying place to order food. Not only is the mall by my house always crowded, they have this weird ordering system where everyone waits in a line and gets their food as they go. There is the baked goods station, then the sandwich station, and then it is salad, and finally soup. So, if you just want a bowl of soup, you have to wait in this huge line while everyone orders their sandwiches, and salads. It takes forever and you never know if you can hop in line to the station that you actually need. So we all just stand there, starving, while people take forever to decide what they want and the kids making the food look annoyed too. Why wouldn’t they be? There are always huge lines and everyone waiting for them to make their food. That is why I needed to learn to make this at home.

For me, salads are hard to recreate at home. The reason is because the salad dressing that you get at the grocery store is never as good as a restaurant and if you make it from scratch, it only lasts a few days. This is sort of a hybrid recipe that I discovered from a recipe but still changed it slightly. You do need to make the dressing a bit in advance so that the flavors marry but it is really easy and makes for a great salad at home. Try it out and let me know what you think!

Southwest Chicken Caesar Salad

1 head of Romaine hearts chopped

½ cup of grated pepper jack cheese

½ cup tortilla strips (usually located by the salad dressings)

1 cup chicken, cooked and chopped (try my margarita chicken for this one!)

½ cup Caesar dressing

1 tsp of chili powder

½ tsp paprika

½ tsp cumin

Mix dressing and spices together in a small bowl. Mix well. Cover and put in fridge for 1-3 hours. Add all ingredients to a bowl, including mixed dressing, Toss well so everything is coated. Serves two entrée portion salads.
