Pizza Bake


This is such a fun and easy dish that anyone can make. If you need a break from your normal frozen pizza or weekly spaghetti dish, give this easy recipe a try. It is good for picky eaters too. Again, like most recipes, it can be modified to your liking so have fun with it and try new things. Since I like things simple, I will be sticking close to the original recipe.

The other day I got a nice little surprise in the mail; a Pillsbury calendar. It had a recipe in it that I had been thinking about making so I thought it was a sign to finally try it! I do not make meals that include much gluten so I had been putting it off since it uses a can of prepared biscuit dough. That is a no no to my belly but I decided to be bad and try it and I am so glad that I did. This is an easy meal that will curb your craving for the bad pizza that you get delivered.

First, you will want to open a can of the large biscuits. I used Pillsbury Grands because they were only $.88 at my store but I think you could use the smaller biscuits but you would need to use at least two cans and cut them into fourths. Cut each biscuit dough patty into eight pieces. I did it like you would cut a pizza. As you are cutting them, toss them into a large mixing bowl. Next you will add about 7-8 oz (about half a jar) of your favorite tomato sauce. I used Classico Pizza sauce because it is my favorite. Then add about one cup shredded mozzarella, ¼ cup shredded parmesan cheese, and mix everything together. Pour into greased 9 X 13 pan and top with about 16 pepperonis or half of a package. You could also use sausage or veggies too! I also recommend cutting the pepperonis in half so that that every bite can have a piece. You can also top with some more cheese before putting in the oven. Yes to extra cheese for me please! This goes nicely with a small side salad. A full meal and so super easy for you busy moms.

Some other ways to try this would be to exchange pesto for the red sauce, use chicken sausage instead of pepperonis, add your favorite veggies like sautéed mushrooms, onions, green peppers, or black olives. Have fun!

Pizza Bake

1 can of large biscuits, each cut into 8 pieces

7-8 oz pizza or marinara sauce

8 oz mozzarella cheese, shredded

¼ cup parmesan, freshly grated (can omit)

16 pepperonis, cut in half

Preheat oven to 375. Toss biscuit dough pieces, sauce, and cheese into a large mixing bowl. Spray 9 X 13 dish with cooking spray. Pour in mixture and spread until it covers entire dish. Top with pepperoni and extra cheese. Bake for 25-30 minutes.
