Breakfast Pizza
If your husband is anything like mine, they could eat pizza for every meal. This made me think of one of my favorite breakfasts when I was a child. For a special treat my mom would sometimes buy those Red Baron personal breakfast pizzas on the weekends. I would wake up on a Saturday or Sunday and smell the glorious smell of country gravy and bacon! If you have never had one of these pizzas, it wouldn’t surprise me, but you really should have a convo with your parents why they ruined your childhood. They are cute little personal deep dish pizzas filled with eggs, cheese, country gravy, and bacon. Every little kid’s dream! I grew up during the era of Oreo Big Stuff and Crystal Pepsi so please don’t judge me. Breakfast pizza is pretty much like fruit compared to some of the other interesting food products from the 80’s.
Well, I wanted to clinch my “Most Awesome Wife” trophy so I decided to attempt to make an adult sized breakfast pizza. Again, you can make any of this from scratch but I am going to use as many shortcuts as I can. You are just not going to find me making homemade country gravy…not gonna happen. But, if you want to do this, fantastic! I will wait for my breakfast invitation to your house…
Preheat oven to 400 degrees. Take out a pizza pan. If you do not have a pizza pan, that is okay, you can use a small baking sheet just as easily. Grease pan with cooking spray or butter. I use butter for this one because let’s face it; it’s pizza for breakfast. I am not winning any bikini contests eating this for breakfast. Spread your pizza dough out over the pizza pan so that it covers almost the entire pan. The dough comes as a rectangle so you may have to be creative and use your Play Doh skills here. I also like to curl up the edges so you get a nice crust. If you have your own pizza dough that you like to make, please feel free to use that. I am sure you could make it the day before so it is ready for the morning. I just use the can of Pillsbury pizza dough. It has always tasted as good to me as homemade but it is definitely up to you. After the dough is all spread out to your liking, put the pizza dough in the oven for 6 minutes.
While the dough is cooking you can whip up your scrambled eggs. Take pizza dough out. I lay a towel on my counter so it doesn’t hurt the countertops. Now, take your prepared package country gravy and spread about half (about 1 cup) of the gravy over the pizza crust. Take scrambled eggs and spread on top of the gravy like you are making a regular pizza. I do this part with my hands because it is easier to get it evenly over the pizza crust. I also suggest to under cook your eggs just a tad. I generally like my scrambled eggs a little overcooked so I make sure that I undercook them just a bit because they will continue to cook in the oven. I think culinary types call this a soft scramble. I am sure my undercooked eggs are how they are actually supposed to be but hey, I never proclaimed to be a chef. Now top with meat and any other toppings you want on your breakfast pizza. I use the already cooked bacon so I can easily take it out of the package and chop into bite sized pieces. You could also use sausage or ham but I would suggest that you cut the sausage into very small pieces so it doesn’t weigh down the crust. Sprinkle about 1 cup of shredded cheese on your pizza. I like to use the finely shredded Mexican blend cheese that you can get from the grocery store. You could also top with veggies instead if you do not eat meat.
Put back into the oven for about 6-8 minutes or until cheese is melted and the crust is golden brown. Cut with a pizza cutter and enjoy! Your family will love you!! You can also refrigerate any leftovers and heat up the next morning.
Breakfast Pizza
1 Pillsbury refrigerated pizza crust
1 cup Country Gravy, prepared
1/2 cup Bacon, cooked and sliced into bite sized pieces, or other breakfast meat of your choice
2-3 Eggs, scrambled
1 cup Cheese, shredded
Preheat oven to 400 degrees. Grease pizza pan. Spread dough out over the pizza pan. Put pizza dough in the oven for 6 minutes. Cook eggs and heat up bacon. Take pizza dough out and be careful because it will be hot! Spread prepared gravy over crust and top with egg, bacon, and cheese. Put back into the over for 6-8 minutes until cheese is melted and crust is golden brown. Slice with pizza cutter and enjoy!
