Candy Cookie Pie


I definitely do not have a sweet tooth. This does not mean that I do not like sweets, I just prefer a soft pretzel or chips when I want to indulge instead of cookies and cupcakes. Since I do not make many sweets in my home, when a holiday or birthday comes up, I need to make sure that I pick the best dessert I can find. That is when I found a Nestle Tollhouse recipe for a candy shop pizza. For the record, I like my name better. This reminded me of when Phoebe on Friends is trying to remember her grandma’s recipe for cookies and she finally says that the author of the recipe was Ness Lee Tolhousa. Another funny moment from that show!

This dessert is very indulgent and it is very easy to make. It starts out with a prepared tube of cookie dough. You are more than welcome to make your own cookie dough if you have a family favorite. I do not generally make cookies from scratch so it is a tube of Pillsbury goodness for me! I know it says not to eat raw cookie dough on the package but really, how can anyone resist this? I always have to take a little bite. It is just too good to avoid.

First you will want to preheat your oven to 325 degrees. Now take out a small, round cake pan. I lined mine pan with foil so that when your cookie pie is complete, you can easily remove from the pan and cut into slices. Once you line your pan with foil, spray with cooking spray. Now, slice up your dough and press the entire package of cookie dough into the pan. Just get in there with your hands! This part is kind of fun.

After your cookie dough is completely pressed into your pan, place in oven for 18-20 minutes. Now, you will want to measure out your toppings. You will need ¼ a cup of creamy peanut butter and ½ cup of milk chocolate chips. Now here is where you can get a little creative. Since there is already peanut butter, and Reese’s are one of my faves, I chose to use Reese’s peanut butter cups. If you like dark chocolate, you could choose to use dark chocolate chips and a dark chocolate candy bar. You could even use white chocolate with this. I love recipes where there is some wiggle room. Have fun and include what you like best.

Now you will want to chop up your candy bars. I suggest using 2-3 candy bars depending on how big they are. For this particular one, I used two packages of peanut butter cups. This is also where you could use some of your leftover Halloween Candy.

Once the cookie has finished baking, sprinkle chocolate chips all over the surface of the cookie. Now, you will want to place dollops of the peanut butter on top. Let it sit for about 5 minutes or until the chocolate chips are all shiny. Now take the back of a spoon and spread out the melty peanut butter and chocolate all over the cookie. It is amazing how easily it melts and spreads! Now for the final step, sprinkle your chopped candy bars all over the top. Let it sit for at least 10 minutes before diving in. Yummy!

You could serve this warm but if you are looking for a less messy way of eating this, chill in the fridge or freezer until the chocolate on the top is solid. It is much easier to cut this way and a lot less messy. Once the cookie has completely chilled, lift the cookie pie out of the pan with the foil and cut into pie slices. So easy and you can even eat it with your hands. My kind of dessert!

Candy Cookie Pie

1 tube of prepared cookie dough

¼ cup creamy peanut butter

½ cup of milk chocolate chips

4 Reese’s Peanut Butter Cups

Preheat oven to 325. Line a small, round cake pan with foil. Spray with cooking spray. Press entire tube of cookie dough in pan. Bake for 18-20 minutes. Remove from oven and sprinkle on chocolate chips. Place dollops of peanut butter on top. Let sit for 5 minutes or until chocolate chips are completely shiny. Spread melted chocolate and peanut butter. Sprinkle on peanut butter cups. Cool for at least 10 minutes. Slice and enjoy!
