Item of the Week!


Every family has their easy go-to meals during the week. Although mine change from time to time, right now I regularly make Kung Pao Chicken with Basmati Rice. It is so quick, easy, and tastes amazing!

The first thing you do is dice up and cook some chicken. Once it is done, add Panda Express Kung Pao sauce. I always add green beans to mine but you could add onions, peppers, or broccoli and I am sure it would taste amazing. Basically, whatever you have in your pantry or fridge. You could eat it just like this for a healthier stir fry but I like to add rice.

Again, being a picky eater makes it difficult sometimes. I remember being a young child and pouring my Kool-Aid on the plain white rice that my mom made me eat. I was a good kid and never remember getting in trouble for anything but not eating my dinner. I have never liked plain white rice but for some reason I love Basmati rice. I used to order it at this little Greek place across from my work. Much to my surprise, Uncle Ben’s includes Basmati rice in their 90 second Ready Rice pouches. You simply tear open the package and cook for a minute and a half. It is so quick and so good! Each bag feeds about two people. Try it out!
