Amazing Caramel Popcorn!

I can't think of a treat that screams FALL more than Caramel popcorn!!! The smell of melted butter and sugar has to be one of the best smells ever. This recipe takes over an hour to make but let me tell you that it's worth every minute!!! I got this recipe from my mother in law, Kathy! I knew I scored in the in-law department when I married my husband. Not only is my mother in-law one of the nicest people I know, she is a great baker! I love that she shares all her delicious recipes with me :) When I was planning my wedding she told me about this recipe. I ended up handing out this popcorn as the guest favor at my reception!! It's THAT good!! If this picture doesn't make you run to your kitchen then I don't what will!

Start by air popping your popcorn kernels. I love to use my Whirley popper but any air popper will work. This recipe calls for 6 quarts of popcorn, which is about 1/2 of a cup of popcorn kernels. I like to go through the batch carefully after it is popped to remove any kernels. There is nothing worse than eating delicious caramel popcorn and chomping down on a kernel.

While you are going through the popcorn you can have the butter melting on the stove. Add in the brown sugar, corn syurp and salt once your butter is melted. Bring to a boil stirring constantly. Once it's boiling, let it boil without stirring for 5 minutes. After 5 minutes remove from heat and add baking soda and vanilla. Watch it grow!! Before it falls pour it on your popcorn and stir it gently so you don't break all your popcorn.

Pour it onto a cookie sheet and bake for one hour. Pull it out and stir every 15 minutes.

After an hour you have the most amazing popcorn ever! My kids sat on the counter while I stirred praying for little pieces to come off the cookie sheet so they could get a taste. I put it on wax paper while it cooled and then I store it in a zip-lock bag. It makes a good amount! But let me warn you, it doesn't last long!

Kathy's Baked Caramel Corn

Makes 6 Quarts of popcorn

1 cup butter

2 cups brown sugar

1/2 cup corn syrup

1 tsp salt

1/2 tsp baking soda

1/2 tsp vanilla

Melt butter, stir in sugar, syrup and salt. Bring to a boil, stirring constantly. Boil 5 minutes on medium high heat WITHOUT stirring. Remove from heat. Add vanilla and baking soda. Stir well. Pour over corn. Bake at 250 degrees for 1 hour, stirring every 15 minutes. Enjoy!
