Easy Cheesy Chorizo Dip

I love football season for several reasons but the number one reason is the food. Am I right? I mean, it's also a huge sign that Fall is coming and when you endure 110 degrees of heat on a daily basis for several months, that is good thing too! I have to say the excuse to eat chips and dips on a weekly basis is still my favorite reason.

If any of you know me, I am an efficiency queen. I will find the easiest way to do something because it is the best use of my time. Not only am I efficient, I like a good deal. So when I come up with recipes, they are going to be easy and cheap. If you are looking for an old timey, from scratch type of recipe, you will not find it here. I love eating homemade and from scratch meals, I just do not have the patience to make them. This brings me to my super Easy Cheesy Chorizo Dip. I mean, come on! It has only 2 ingredients…what is easier than that? Plus, it tastes super duper yummy.

So, I use soy chorizo for this recipe but you are more than welcome to use pork or beef chorizo if you would like. I find that the soy chorizo is less greasy and a lot lower in calories. It is a low fat recipe, right? I keep telling myself that… LOL! To be honest, I am not always calorie conscience but I really do not want to see the calories. The other chorizo options tend to just ooze grease and the fat and calories just wind up taunting me. If you use pork or beef chorizo, just make sure to drain off the grease. If you use soy, it doesn’t take away any of the flavor and it is safe for your vegetarian guests as well.

Okay, now let’s start. Preheat your oven to 350. Cook the chorizo according to the package. I tend to find that it takes about 5-8 minutes over medium heat. While the chorizo is cooking away and making your kitchen smell like you are in the drive thru at Filibertos, take out the block of pepper jack cheese.

Cut the entire 8oz block of cheese into 1 inch cubes and set aside. If you do not like a lot of spice, you could substitute Monterey Jack cheese. I am an AZ gal so I love my spice! If you are making this for kiddos, they might do better with the less spicy version.

Get out a small, oven safe dish to construct your dip. I have the best dish for dips! It is a 4 X 6 Le Creuset Stoneware dish. Not only is cute enough to go straight from the oven to the table, the interior gloss makes for an easy cleanup. I told you I am the efficiency queen! I am not going to set you up to scrub dishes all day. Not my thang.

Place about half of the cheese cubes in the bottom of the dish. Now spoon in the crumbled, cooked chorizo. Make sure to drain any grease from the meat. Cover with the remaining cheese cubes.

Place in the oven for 20-25 minutes or until hot and bubbly. You will see this yummy goodness start to bubble up in the corners. Be careful when you take this out of the oven because it will be hot, hot, hot. Serve with tortilla chips. There is nothing that fills my heart more than melty cheese!

If you want to add a little freshness, or cut the spiciness of this dish, spoon some fresh mild salsa, like pico, on top once it is out of the oven. It really doesn’t need it but it doesn’t hurt it either. This is definitely optional. Enjoy!

Easy Cheesy Chorizo Dip

5-6 oz Soy Chorizo (a little more than half of the package)

8oz block of Pepper Jack Cheese, chopped into 1 inch pieces

Tortilla Chips

Preheat oven to 350 degree. Cook chorizo according to package directions. Drain grease. Cut cheese into 1 inch cubes. Place about half of the cubes in a 4 X 6, or any other small, oven safe dish. Spoon cooked chorizo on cheese cubes and spread evenly. Place remaining cheese cubes on top of the chorizo. Place in oven for 20-25 minutes or until hot and bubbly. Serve with tortilla chips and fresh salsa (optional).
